  • 1 pound boneless skinless chicken thighs (or breasts, thawed not frozen, cut into large pieces)
  • 1 can corn (fire-roasted, drained)
  • 2 cans green chiles (4 ounces EACH diced fire-roasted, we use mild, undrained)
  • 3/4 teaspoon ground oregano
  • 1 tablespoon chili powder (ground)
  • 1 tablespoon ground cumin
  • 3/4 teaspoon paprika
  • 4 tablespoons fresh cilantro
