Ingredients

  • 2 sweet potatoes (peeled and chopped. Turns out to be around 3½ cups)
  • 4 cups broth
  • 1 pound ground pork (beef, or turkey, see notes for using precooked meat)
  • 1 tablespoon olive oil
  • 14 ounces garlic (diced canned tomatoes, drained)
  • 1 cup white onion (chopped)
  • 1 1/2 cups cauliflower (chopped)
  • 1 teaspoon minced garlic
  • 2 chipotles in adobo (chopped, found on Spanish/Mexican foods aisle or, ½ cup to ⅔ cup hot chipotle salsa may be substituted)
  • 1/4 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • sea salt (to taste)
  • 1/2 shallots (diced - optional)
  • herbs (to garnish)
  • cheese (optional, topping)
