This recipe was great! My family loved it. I didn’t have a can of tomatoes so I used 2 fresh tomatoes and a small can of green chiles. It turned out fresh and flavorful. Highly recommend!

So easy and so delicious! First night we had over rice with a tad bit of sour cream and shredded cheese. For leftovers, we had it taco style on corn tortillas with fresh sliced avocados - SO DELICIOUS!

I made it in a pressure cooker for 20 min., quick release. My chicken pieces were just right. More time and they would have been tough. I would decrease the chicken broth to one cup next time. My diced tomatoes were low sodium so needed a bit more salt. Strained excess liquid and served over lettuce with salsa, sour cream, avocado, and cheese. Was a nice light meal and would make again.

LOVE this recipe! So easy and so healthy! I have made it several times now. I add more cayenne because we like it spicy. I also add one can of diced chilies. Instead of frozen corn I just use a half can of fresh sweet corn. We love it!!! :)

Delicious, healthy, and so easy! The only thing I would’ve done differently is drain the diced tomatoes. The mixture is a tad more watery than I would’ve liked, but is definitely tasty and great served over rice as the recipe suggests. Also added a dollop of fat free sour cream and some avocado!

I️ made this in my Instant Pot. I️ like a lot of spice so I️ doubled the Cayenne pepper. That gave the dish a decent “kick” without overwhelming the other flavors. The family all said it was ok. It’s a quick and easy recipe I️ will keep on hand for days I️ he stuck at the office late.

I didn't have diced tomatoes so I used a jar of picante - since that is runny I decided to cut the broth in half. Served over brown rice with low-fat cheese, yum! Even better the next day when the rice soaked up the juices.
