    Other recipes for roasted crock pot chicken called for at least a little water/stock. I like that this one called for none. The resulting broth was very concentrated and flavorful and would have made a delicious gravy. I rarely make gravy but save the juices from roasting to add to soups and stews. Gives the plain broth/stock a kick! I added my own variety of spices and next time will add onions to the bottom with the potatoes. I used red potatoes and they were DELICIOUS done this way -- having soaked up the broth. I will use this method for crock pot roasting regularly!
