Ingredients

  • 7 ounces diced tomato (I used fire roasted)
  • 2 tablespoons olive oil
  • 3/4 cup turkey kielbasa (cut into ½ inch pieces)
  • 1 onion (diced)
  • 1 can black beans
  • 3/4 cup frozen corn (I used fire roasted)
  • 2 celery (ribs, chopped)
  • 1 cup brown rice (uncooked)
  • 2 chicken breasts (uncooked, chopped)
  • cajun seasoning (as desired)

Directions

  1. Combine all ingredients in slow cooker, stir, cover. Cook on low 6-8 hours or until rice is soft and chicken is fully cooked.
