  • 1 onion (chopped)
  • 16 ounces black beans
  • 16 ounces kidney beans
  • 8 ounces tomato sauce (used a 16 oz can)
  • 10 ounces frozen corn kernels (package, used 2 small cans of corn kernels)
  • 29 ounces diced tomatoes (w/chilies, used a 28 oz can of diced tomatoes)
  • 1 packet taco seasoning
  • 1 tablespoon cumin
  • 1 tablespoon chili powder (used a bit more as I didn't have any chilies in my tomatoes)
  • 3 boneless skinless chicken breasts
  • chili peppers (chopped, optional)
  • chopped fresh cilantro

Probably not the best chili in the world, but certainly one of the fastest and easiest. All you have to do is chop an onion and dump everything in the slow cooker. I really like how simple it is.
