  • 14 ounces tomatoes (cans of)
  • 4 potatoes (peeled and cut into chunks, I like to cut them into large chunks)
  • 1 pound carrots (or so, peeled and cut into chunks)
  • 1/2 cup cooking wine (Holland House Red)
  • 1 cup liquid (or so, but if you want a little more, you can use about 2 cups)

Good Recipe and Easy to follow. I added some Puerto Rican Sofrito to the recipe and upped the amount of garlic. It turned out great. I'll definitely be making this again. I served this with some white rice and companied the meal with a spinach & avocado salad.
