  • 2 tablespoons vegetable oil (plus extra to fry)
  • 12 ounces slaw mix (broccoli, such as a mixture of shredded broccoli, carrot and cabbage)
  • 1/2 cup red pepper (diced)
  • 1/4 cup scallion (chopped)
  • 2 teaspoons ginger (grated)
  • 2 teaspoons minced garlic
  • 3 tablespoons teriyaki sauce
  • 1 package spring roll wrappers
  • 1/2 cup duck sauce
  • cilantro leaves
  • red pepper flakes

Directions

  1. In a large frying pan, heat oil over medium heat. Sauté broccoli slaw mix, red pepper and scallion for 3 mins. Add ginger and garlic. Cook for 30 seconds. Add teriyaki sauce and toss to combine. Transfer to large bowl to cool.
  2. Lay out spring roll wrappers on a clean work surface. Brush edges with water then fill with broccoli mixture. Roll up into a spring roll shape, pressing edges together to seal.
  3. Fill a large saucepan with vegetable oil to a depth of 1 inch. Heat to 350°F. Fry spring rolls for 1-2 mins, or until golden brown. Serve with duck sauce.
