Ingredients

2 medium potatoes
2 teaspoons olive oil
2 tablespoons parmesan cheese (grated)
pepper (coarsely ground, to taste)

Directions

1Halve potatoes lengthwise; brush surfaces with oil. Coat with cheese. Place in microwave baking dish. Microwave on high power 5 to 7 minutes. Transfer onto broiler pan or cookie sheet. Brown under broiler for 1-3 minutes until crispy. Sprinkle with pepper.
2Tired of the same old baked or roasted potato? Try these potatoes with the crusty top. For variation, add different herbs of your choice to cheese mixture before coating potatoes.
