Crispy Fried Cod with Tartar Sauce

Ingredients

  • 2/3 cup mayonnaise
  • 1 tablespoon pickle relish
  • 1 teaspoon capers (chopped)
  • 1 tablespoon fresh herbs (chopped, such as parsley, chives, tarragon)
  • 1 hard boiled eggs (finely chopped, optional)
  • cod (Crispy Fried)
  • 1/4 cup olive oil
  • 8 cod (or John Dory fillets)
  • 1/4 cup all-purpose flour (seasoned)
  • 2 tablespoons rice flour
  • lemon slices
  • french fries

Directions

  1. To make the Tartar sauce, combine mayonnaise, pickle relish, capers, herbs and hard-boiled egg, if using. Season. Set aside.
  2. Heat 2 tbsp oil in a large frying pan over high heat. Combine all-purpose flour and rice flour then lightly dust fish. Working in batches, fry fish for 2 mins per side, until crisp and cooked through. Drain on paper towels. Serve with Tartar sauce, French fries and sliced lemon.
