  • 1 lemon (juiced, yields about 2 T)
  • 1 Tbsp. sesame oil
  • 1 tsp. sugar
  • 8 Brussels sprouts (cleaned, stems trimmed, mandolined)
  • 100 grams purple cabbage (wedges of, shaved thin on a mandoline)
  • 1 g mint (chopped chiffonade)
  • 1/2 tsp. coarse salt
  • 1/2 tsp. ground black pepper
  • 2 aubergine (medium, cut in half lengthwise)
  • 125 grams flour (any kind, gluten free if preferred, divided into 25g and 100g portions)
  • 100 grams soya milk (or almond ,unsweetened)
  • 1 tsp. coarse salt

  • 1 tsp. smoked paprika
  • 1 Tbsp. fresh dill (minced)
