Description

Not quite a pie, not exactly a tart, but an exceptional crispy coconut pastry filled with fresh wild fruits. Coconut, egg whites, and sugar make a sweet and bitter custard to coat the tart fruit and fill the crust. Spoonful the pastry batter on top of the filling for a crunchy, brittle, topping. Allow the pastry to cool completely and firm up the filling before serving. Add chopped pistachios for a pinch of color and texture.

Ingredients

170 grams flour
60 grams grated coconut
100 grams cane sugar
salt
140 grams softened butter
300 grams fruit (frozen wild, blueberries or raspberries)
140 grams grated coconut
70 grams cane sugar
4 egg whites
pistachios (for garnish)

Directions

1Preheat oven to 180 degrees Celsius.
2In a bowl mix the flour, sugar, coconut, and a pinch of salt.
3Add the butter, and stir it to get a nice dough.
4This is a fairly crumbly paste not obviously spreadable.
5Place in a mold lined with parchment paper, and spread by pressing with the palm of the hand.
6Cook the pastry for 15 minutes
7Place the frozen fruit on the pastry dough.
8In a bowl mix the sugar and coconut, add the egg whites.
9Pour the mixture over the fruit.
10Bake for 20-25 minutes until the pie is golden brown.
11Allow to cool before serving.
12Garnish with pistachios
