Description

Salad that is both tasty and satisfying. Chicken covered with bread crumbs and Parmesan cheese give this healthy dish a pleasing mild flavor. Serve for lunch or dinner and watch your family eat their greens!

Ingredients

700 grams chicken breasts
3 egg whites
100 grams grated parmesan cheese
150 grams bread crumbs
olive oil
300 grams baby spinach
1 zucchini
sun-dried tomatoes
hazelnuts
hazelnut oil
balsamic vinegar

Directions

1Cut the chicken into medium sized pieces.
2In three separate shallow dishes, arrange Parmesan cheese, breadcrumbs, and egg whites.
3Dip the chicken pieces in the egg whites and then roll them in the breadcrumbs and parmesan.
4Heat 2 tablespoons of olive oil in a skillet and add the chicken.
5Brown the chicken pieces in all sides.
6Wash the spinach.
7Cut the zucchini into thin strips.
8To serve, plate, place a little bit of spinach leaves, zucchini, sundried tomatoes, chopped hazelnuts and crispy chicken strips.
9Drizzle with a dressing made with 1 tablespoon balsamic and 2 tablespoons of hazelnut oil, salt, and pepper.
