Crispy Cauliflower with Yogurt-Mustard Sauce

Ingredients

  • 1 cup self rising flour (+ 2 tbsp)
  • 3/4 cup beer
  • vegetable oil (for deep-frying)
  • 1 pound cauliflower florets
  • mustard sauce (Yogurt-)
  • 1 cup greek yogurt
  • 2 tablespoons whole grain mustard
  • 2 tablespoons fresh parsley (finely chopped)
  • 1 clove garlic (minced)

Directions

  1. Combine flour and a pinch of salt. Whisk in beer and 1/2 cup water gradually to form a smooth batter.
  2. Heat oil in a large saucepan. Dip cauliflower into batter, draining off excess. Working in batches, deep-fry cauliflower for 2-3 mins, until golden brown. Drain on paper towels.
  3. To make the yogurt-mustard sauce, combine all ingredients.
  4. Serve cauliflower with yogurt-mustard sauce.
