it's very simple and I like it. Don't hesitate to put a lot of feta, and even some other cheese and not to put too much beans.

Pretty good! It was just a bit dry so I had some jarred salsa that I put on while eating, but I bet a good fresh salsa would be better

So quick and easy. And tasty too. I now keep the ingredients on hand for late work nights. I just use what ever cheese on hand. Always good. And easy clean up as I dump everything in a gallon zip up bag and smash the beans in the bag. Then leftovers can be zipped up for another night.

These were fabulous! Definitely will make these again. I used mozzarella cheese but now I want to try the feta. Also, I added a touch of salt after toasting the tacos. I Used the taco to scoop a bit of salsa and sour cream, it was like nachos on overload. So many ways to serve these too. Pineapple salsa and salad would be great way to lighten up the whole meal.

Delicious! We ended up making these for dinner two nights in a row! So many variations you can play with, I will say that the feta really makes this! We tried different cheeses and all agreed we like the feta the best.

Yay for Meatless Monday! This is always a hit with the boys when i force vegetarian meals upon them, as i am wont to do. They endure, nay, thrive, on this hearty black bean concoction fortified with cheese and enhanced with sour cream and mystery hot sauce (my husband insists on removing the labels so as to elicit a sense of adventure and mystery at meal time). The second time i made this I did, however, juice an entire lime assuming it was close enough to a Tbsp. Big mistake. So tart. So sour. Don't do that.

This one of my favorite weekday recipes. It is super quick and easy, and always pleases our whole family. I make almost on a weekly basis.
