Description

Made with canned black beans, a few simple but lively seasonings, and tangy feta cheese, these vegetarian tacos come together in just 20 minutes. - Preheat the oven to 200°F. Place a baking sheet on middle rack while it heats.
- Rinse and drain the black beans. Chop the cilantro and green onions. Cut one lime into wedges and set aside. Squeeze the juice from the remaining lime.
- Transfer the black beans to a medium mixing bowl and add the chopped cilantro, green onions, lime juice, olive oil, chili powder, garlic powder, salt, and feta. Stir well to combine.

Great base recipe that I modified by seasoning (added cumin) and cooking the beans for 6 minutes before adding the feta and herbs. Will definitely be added to the rotation.

Simple and yummy, I added a teaspoon of cumin as well to dial up the southwestern flavour. Planning to use the left over black bean mix on toast topped with a fried egg for tomorrow’s breakfast.
