Made with canned black beans, a few simple but lively seasonings, and tangy feta cheese, these vegetarian tacos come together in just 20 minutes.     Simple and yummy, I added a teaspoon of cumin as well to dial up the southwestern flavour. Planning to use the left over black bean mix on toast topped with a fried egg for tomorrow’s breakfast.
