You may be shocked when you’re asked to pass the crisps, rather than the potato chips. Figs and goat cheese mix together to give a pleasant, mild taste. Little fingers may be tempted to play with the stars.

Ingredients

  • 4 dried figs
  • 110 grams white flour
  • 45 grams flour (wholewheat)
  • 90 gramsbutter
  • 60 grams fresh goat cheese
  • 1 egg yolk
  • 1 tablespoon water

Directions

  1. Cut the figs into small pieces.
  2. In a bowl, mix the flours and butter, work it all with your fingertips to obtain a grainy paste.
  3. Add the goat cheese, figs, egg yolk, and water. Knead to a smooth dough.
  4. Wrap your ball of dough in stretched plastic wrap, and refrigerate for 30 minutes.
  5. Preheat oven to 190 degrees Celsius.
  6. On a floured surface, roll out dough to 5 millimeters thick, and cut out shapes.
  7. Bake on a parchment paper or Silpat for 10 minutes.
  8. Let cool on a rack.

These are lovely little crisps. The cheese and fig really works well together and they're easy to keep eating once you get started.
