Description

Ah, the goodness of sweet and creamy mixed together. Add green or red sprinkles to change things up a bit. Sugar and cinnamon bring out the flavor of the apples in this any-time dessert. Makes a perfect companion for coffee.

Ingredients

1/2 liter milk
200 grams flour
4 eggs
1 tablespoon sugar
1 pinch salt
1/2 liter milk
2 tablespoons corn starch
100 grams sugar
4 egg yolks
50 grams butter
1/2 lemon
1 cinnamon sticks
3 pippin apples (may substitute Granny Smiths, chopped)

50 grams butter
1 cinnamon sticks

Directions

1Combine the milk, flour, eggs, sugar, and salt in a bowl. Let rest 30 minutes.
2Melt a little butter in a 20 centimeter skillet and pour in a ladleful of batter. Tilt the skillet to spread out the batter. Flip and cook until golden on both sides. Repeat.
3Place the apple into a saucepan with the sugar, butter, and cinnamon. Cook on low heat until caramelized and glassy.
4Make the pastry cream by adding the cornstarch and egg yolks to 1/2 cup milk. Beat well.
5Mix the rest of the milk in a saucepan with the lemon rind, cinnamon, and sugar. Bring to a boil and add the cornstarch mixture. Stir until thick. Remove from heat and add the butter. Mix well.
6Assemble the crepes by filling each with a little pastry cream and caramelized apple. Roll, sprinkle with sugar and brown the tops with a kitchen torch.
