Ingredients

  • 500 milliliters milk
  • 3 eggs
  • 180 grams flour
  • 1 tablespoon oil
  • butter
  • 150 grams frozen raspberries
  • 250 grams heavy cream
  • 2 tablespoons confectioner's sugar
  • 4 tablespoons confectioner's sugar
  • 1 lime

Directions

  1. In a medium bowl, combine milk, eggs and flour. Mix well.
  2. Add the oil and a pinch of salt.
  3. Let the batter rest for 1 hour.
  4. Cook the crepes in a lightly greased pan, set aside.
  5. Preheat oven to 180 degrees Celsius.
  6. Butter 4 tartett tins, fit one crepe into each.
  7. Divide the raspberries among the 4 tartletts, sprinkle with confectioner's sugar and add one tablespoon of cream.
  8. Bake for about 15 minutes at 180 C.
  9. Remove from the oven and let them cool down.
  10. With an electric mixer, whip the remaining heavy cream gradually adding the sugar.
  11. With a pastry bag, decorate the tartlets with the whipped cream.
  12. Sprinkle each tartlett with some lime zest.
