  • 1 cup low-fat cottage cheese
  • 3 ounces neufchatel cheese
  • 1 cup sugar (or less)
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice (Fresh squeezed)
  • 1 teaspoon lemon zest
  • 1 tablespoon canola oil
  • 1 cup non-fat yogurt
  • 4 cups fruit (Sliced, or berries)
  • 2 tablespoons powdered sugar (or less)

Directions

  1. Nice weekend breakfast idea.
  2. Crepes with a cheese filling which are lightly browned and served warm with fresh fruit or other toppings.
  3. Prepare crepes and zest.
  4. Fill each crepe.
  5. Fold.
  6. Saute in oil until slightly browned.
  7. Serve with non-fat yogurt, fresh berries or fruit and sprinkle with powdered sugar.
