  • 1 onion (large, chopped)
  • 2 tablespoons olive oil
  • 2 stalks celery (chopped)
  • 3 carrots (diced)
  • 2 teaspoons minced garlic
  • 1 quart chicken stock (I use turkey bone broth)
  • 2 cups diced tomatoes (petite, I use homemade)
  • 1 cup sliced carrots (green beans or corn, or all 3)
  • 1 teaspoon salt
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons creole seasoning (*, see below to make your own)
  • 1 teaspoon oregano
  • 2 bay leaves
  • pepper (to taste)
  • 1/2 cup long grain rice (cooked)
  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon ground black pepper (freshly)
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
