Ingredients

  • 1/2 passion fruit (depending on size)
  • 48 grams egg yolk
  • 45 grams powdered sugar
  • 150 grams whipping cream

Directions

  1. Preheat oven to 90 ° C.
  2. Open the passion fruit, remove the seeds and the juice and pass them through a small strainer to retrieve only the juice by crushing the seeds with a teaspoon.
  3. Mix the egg yolks and sugar in a bowl. Gradually add the cream and then the juice of passion fruit.
  4. Pour the mixture into small ramekins or bowls.
  5. Put the ramekins in the oven and bake for about 25 minutes until the mixture is cooked but slightly shaky.
  6. Let cool down, then put in the refrigerator so that the cream sets.
  7. Shortly before serving, sprinkle a little powdered sugar on the surface of each and use a torch or a grill to carmelize the tops. Check to make sure that the creams do not burn.
  8. Serve immediately after carmelizing to avoid the cream turning back into liquid.
