Nothing says luxury like a creamy creme brulee dessert. Indulge yourself with this rich dessert featuring a caramelized crust. Flavored with whole vanilla bean, lemon peel, and orange peel, each bite has a warm citrusy flavor. The brown sugar on top can be caramelized either with a blowtorch or under the broiler. Elegantly served in individually sized ramekins these creme brulee cups are a great dessert option when entertaining guests.

Ingredients

  • 0.5 liters milk
  • 1 vanilla bean (sliced lengthwise in half)
  • 1 orange peel
  • 1 lemon peel
  • 4 egg yolks
  • 125 grams sugar
  • 10 grams cornstarch
  • 4 teaspoons brown sugar

Directions

  1. In a pot, heat the milk up with the vanilla bean, orange peel, and lemon peel.
  2. When it starts to boil, turn off the heat and remove the solids.
  3. In another bowl, whisk together the egg yolks, sugar, and cornstarch.
  4. Constantly whisking, incorporate the egg yolk mixture into the hot milk.
  5. Put the milk back on low heat until it thickens.
  6. Pour the thickened cream into 4 individual ramekins and let cool.
  7. Sprinkle 1 teaspoon of brown sugar over the top of each ramekin and caramelize it either using a handheld flame or the broiler of the oven.

how much is the 5/8 of sugar and 5/8 of cornstarch???
Easy enough recipe when you have a craving for creme brulee and no cream ;) I omitted the citrus and everything turned out delicious. I wish this recipe was a little more precise with timing. In order to get the recipe to thicken further I kept the mix on the low heat for about 5 min while mixing.
