  • 1 pound lean ground beef
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sun dried tomatoes (chopped)
  • 1/4 cup basil (chopped)
  • 1 egg (lightly beaten)
  • 2 tablespoons tomato paste
  • 2 green onions (thinly sliced)
  • 20 green olives (stuffed, halved)
  • tomato sauce (to serve)

Directions

  1. Preheat the oven to 400°F. Line 2 baking pans with foil.
  2. Combine ground beef, Parmesan cheese, tomatoes, basil, egg, tomato paste and onion in a large bowl. Season to taste and mix well.
  3. Using wet hands, shape level tablespoonfuls of mixture into balls. Place on prepared pans. Press a half olive into each meatball. Refrigerate for 20 mins.
  4. Spray meatballs with no stick cooking spray. Bake for 15-20 mins, until golden and cooked through. Serve meatballs with tomato sauce.
