Description
Creamy White Chocolate and Coconut Milk Fruit Salad has drained fruit cocktail, peach chunks, pineapple chunks, and mandarin oranges all folded in a mixture of instant white chocolate pudding and coconut milk. Serve it as a salad or serve it as a dessert, no rules here.

- 1 cup coconut milk
- 1 pkg. chocolate instant pudding (4 servings white)
- 30 oz. fruit cocktail (drained really well)
- 30 oz. peach (chunks, drained really well)
- mandarin oranges (2, 15 oz canned, drained really well)
- 40 oz. pineapple chunks (drained really well)

Directions
- In a medium bowl, add coconut milk and instant pudding and mix until creamy and smooth with a wire whisk (If the mixture is lumpy, pour through a sieve, and it will be fine.); set aside until thickens.
- In a large bowl, add all the drained fruit. Pour pudding mixture over fruit.
- Fold in the pudding mixture with the drained fruit coating fruit well being careful not to break down the pudding texture. Refrigerate immediately so the pudding and fruit will set. Refrigerate at least 2 hours before serving.
