I loved this. I have made it twice. i season the polenta and add liquid smoke for flavor. I add water when the polent gets too thick

So I guess I got the wrong type of polenta (I used the Trader Joe’s kind) and it didn’t turn out. There was way too much liquid and the polenta never thickened up enough. However, the mushroom spinach mixture was delicious, and I ended up throwing on a pot of spaghetti and then topping it with the liquidy polenta and mushroom mixture and it ended up tasting great. Definitely not the meal I was meaning to cook, but the whole family loved it. I will try this again with the specific type of polenta mentioned in the recipe to see if I can get it right next time. The flavors are great, so I am sure the actual dish would be great too.

Polenta is delicious with the coconut milk and nutritional yeast - a combo I never thought would work but totally does. Delicious and a great option when your looking for a comfort food recipe in those cold winter months.

This recipe is so healthy, I added a bit more soy sauce to the mushrooms during the final prep so more mushroom flavor would be produced. I would say you only need 1/2 of an onion tops per recipe, other than that this was fantastic. Loved it.
