Ingredients

  • 2 tablespoons raw cashews (soaked overnight)
  • 2 tablespoons toasted pine nuts (soaked overnight, or raw to keep salad raw)
  • 1/2 tablespoon brown rice syrup (see notes for substitutions)
  • 1/2 tablespoon fresh lemon juice
  • 1 cucumber (small, peeled)
  • 1 pinch sea salt (& freshly ground black pepper)
  • 2 teaspoons water (or as needed to blend)
  • 1/2 cup sliced cucumber (for me this was about 4 medium-sized cucumbers)

That salad makes me feel so good when I eat it, because it's always fresh and taste delicious and also because it's a low calories recipe :)
