Ingredients

  • 1 1/2 cups vegetable stock
  • 1 pound spinach
  • 1/2 pound tagliatelle (or fettuccine)
  • 4 tablespoons oil
  • 1 pound mushrooms (sliced)
  • 1 onion (medium, chopped)
  • 2 garlic cloves (crushed)
  • 1 pinch grated nutmeg
  • 1 tablespoon plain flour
  • 1/2 cup heavy cream

Directions

  1. Bring the stock to a boil, add the spinach and cook for about 3 mins or until wilted. Cook the pasta according to the package instructions.
  2. Heat the oil in a pan and sauté the mushrooms, onions and garlic for 7-8 mins, stirring regularly. Stir in the flour, then add the stock and spinach and the cream and bring to a boil, stirring. Season with salt and pepper. Drain the pasta and mix with the sauce. Serve immediately.
