4 large sweet potatoes makes a lot! We baked the sweet potatoes on a jelly pan in the oven @350 for 30 minutes. Doubled the sauce to match the quantity of noodles. Added sautéd veggies on top. Took a little longer to make than 2 hours.

It was good. I added more greens. my husband didnt hate it and my son had seconds, so that was bonus I have some leftover sauce.

Really good and filling. My husband really liked it too. The recipe said 4 sweet potatoes but it made so much! I would say 2 would do a decent batch. I think more spinach is needed too. I also needed to cook the potatoes more than 7 minutes! The directions weren't very clear and disappointing.

I added onion and paprika powder to the sauce to add a bit more flavour, also i made the recipe with half sweet potato and half regular spagetthi, the combination of the two worked out wonderful

Absolutely delicious! Made it with quite a few variations - used regular pasta and pumpkin chucks instead of sweet potato noodles. Added mushrooms and green beans, thyme and a small amount of cream and olive oil to create more of a sauce.

This dish is delicious. I added about a 1/3 of a cup of sun dried tomatoes to the cashew sauce which also worked really well. Will definitely make this again.

super yummy! id make it with a touch less garlic, and itd be pretty good with ricotta cheese, but thats not vegan if thats what youre looking for!

Sauce is a little bland and could use some oomph. Maybe even adding extra vegetables would help. Otherwise, tasty and nutritious!

I made a few modifications based on some other cashew sauce recipes but this was my motivations I substituted water for vegetable stock and used nutritional yeast to add more of a cheese flavor. I’m a garlic nut so I used 5 cloves. All in all, YUM YUM YUM
