Sausage and potatoes are two of my favorite things. This dish was solidly good. I did not care for the boiled-all-day-onion taste. Next time I am going to saute the onions until they caramelize. I am also going to brown the sausage before it goes into the slow-cooker and deglaze the pan with the chicken stock for extra flavor. This really did not need to cook for 6-8 hours - the potatoes were pretty mushy by then. We enjoyed it, but the wife said it was like eating pot-pie filling without the peas and crust. It is a recipe with a lot of potential and I am glad you shared it. I am anxious to play with it some more.
