Ingredients

  • 2 cups milk
  • 3 1/2 ounces long grain white rice (cooked)
  • 1/4 cup granulated sugar
  • 1 egg (lightly beaten)
  • 3 ounces dates (chopped)
  • 2 1/2 tablespoons butter (chopped)
  • 1 tablespoon brandy
  • 1 teaspoon vanilla extract
  • 2/3 cup sliced almonds (toasted)
  • 1/2 teaspoon cinnamon
  • heavy cream (to serve)

Directions

  1. Bring milk, rice and sugar to a boil. Reduce heat and simmer, stirring occasionally, for 15-20 mins, until thick and creamy. Add egg and mix until combined. Fold in dates. Reduce heat to low and cook, stirring, for 1 min, until thickened. Add butter, brandy and vanilla. Chill until ready to serve.
  2. Serve sprinkled with almonds and cinnamon. Drizzle with cream.
