Ingredients

  • 1 tablespoon vegetable oil
  • 1 shallot (peeled and minced)
  • 600 grams potatoes (diced)
  • ham
  • 50 grams speck
  • 400 milliliters milk (fresh)
  • 1 liter vegetable stock
  • salt
  • 150 grams creme fraiche
  • chives (minced)

Directions

  1. In a skillet on medium heat, add the oil and saute the shallot for a few minutes.
  2. Add the potatoes and speck or ham and cook until golden brown.
  3. Set aside a spoonful of potatoes, and then add the milk, stock, and a pinch of salt.
  4. Cook on a low heat for about 1 1/2 hours and then place in a blender together with the crème fraiche and chives. Puree until smooth.
  5. Serve hot in soup bowls with the remaining potatoes as garnish.

This recipe gives warm, creamy, comfort to chilly afternoons! I used extra, snipped chives and diced, sautéed speck for a garnish to sprinkle over the reserved potatoes, then cracked a bit of fresh pepper over the top of it all. I served warm whole-wheat rolls with butter as an accompaniment!
