  • 1 eggplant (medium, unpeeled, about 1 lb.)
  • 1/2 cup Hellmann's® or Best Foods® Light Mayonnaise
  • 1/4 teaspoon grated lemon peel
  • 1 clove garlic

    Directions

    1. Grill or broil whole eggplant, turning occasionally, 10 minutes or until eggplant is black and soft. Cover and let cool to room temperature. Peel eggplant and remove stem end.
    2. In food processor or blender, process eggplant and remaining ingredients until smooth. Season, if desired, with salt and ground black pepper and serve with pita bread or your favorite dippers.
