  • 1 chicken breast ([cubed])
  • 4 zucchini (• medium, [noodled])
  • 1 cup corn
  • 1 cup peas
  • 1 cup mushrooms ([sliced])
  • 1/2 onion ([diced])
  • 1 clove garlic ([minced])
  • 1 teaspoon thyme
  • 4 ounces heavy cream
  • 2/3 cup cheese ([shredded])

    Directions

    1. Sear the chicken before adding the onion, garlic, mushrooms. Cook those for about 3 minutes - until the onion softens.
    2. Toss in the corn, peas, zucchini noodles and cream. Cook for another 3 minutes.
    3. Lastly, dump the cheese in and remove from the heat. Stir until cheese is melted.
    4. Voilà! The best zucchini pasta dish you'll ever have.
