  • 1 onion (medium, chopped)
  • 1 red bell pepper (or red chilies finely chopped)
  • 2 green chilies (serranos or jalopenos seeded and minced)
  • 1 zucchini (medium, diced small)
  • 4 cloves garlic (grated)
  • 1 tablespoon olive oil
  • 2 tablespoons cajun seasoning (see recipe below)
  • seasoning salt (or salt to taste)
  • red chili flakes (to taste)
  • 1 cup low-fat milk
  • 3/4 cup water (starching cooking, from the pasta)
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon parsley (minced)
  • 2 cups frozen green beans (optional)
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
