Creamy Broccoli and Gorgonzola Cheese Soup

All you need is a blender (and a bit of cream, if desired) to prepare vegetable soups with a velvety smooth consistency, as in this recipe. Just be sure to cook the broccoli, along with the other ingredients, until it is tender when pierced with the tip of a paring knife (or until the florets are falling apart in the pot) before blending. If you have an immersion blender, that will save you a step and make cleanup a breeze.

Ingredients

  • 1 leek (sliced)
  • 1 tablespoon butter
  • 300 grams broccoli
  • 1 potato (peeled and sliced)
  • 1 liter chicken stock
  • heavy cream
  • 50 grams gorgonzola cheese
  • salt

Directions

  1. In a large stockpot, saute the slices of leek in butter.
  2. After about 5 minutes, add the broccoli florets and the potato slices.
  3. Cover with stock, and simmer on low heat for 30 minutes,
  4. After 30 minutes, add a splash of heavy cream, gorgonzola cheese, and salt to taste.
  5. Blend until creamy.

This is one of my favorite soup recipes ever. I love the gorgonzola cheese and broccoli mix. The fact that it is good for you is just a little bonus.
