Creamy Broccoli and Gorgonzola Cheese Soup

Description

All you need is a blender (and a bit of cream, if desired) to prepare vegetable soups with a velvety smooth consistency, as in this recipe. Just be sure to cook the broccoli, along with the other ingredients, until it is tender when pierced with the tip of a paring knife (or until the florets are falling apart in the pot) before blending. If you have an immersion blender, that will save you a step and make cleanup a breeze.

Ingredients

1 leeks (sliced)
1 tablespoon butter
300 grams broccoli
1 potatoes (peeled and sliced)
1 liter chicken stock
heavy cream
50 grams gorgonzola
salt

Directions

1In a large stockpot, saute the slices of leek in butter.
2After about 5 minutes, add the broccoli florets and the potato slices.
3Cover with stock, and simmer on low heat for 30 minutes,
4After 30 minutes, add a splash of heavy cream, gorgonzola cheese, and salt to taste.
5Blend until creamy.
