Ingredients

2/3 cup avocado (flesh)
2 cups beans (cooked)
1 cup water
1/2 chile pepper (chipotle)
4 sprigs cilantro
1 pinch ground cumin
1 teaspoon vegetable oil
cheese (Panela, may substitute mozzarella, shredded)

Directions

1Combine the avocado, beans, and half a cup of water in the blender and liquify. Add the chipotle, cumin, and cilantro. Blend.
2Heat the oil in a saucepan and add the puree. Add more water if necessary, the mixture should be creamy. Heat until it begins to bubble, remove from heat, and serve, sprinkled with cheese.
