Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion
  • 1 clove garlic
  • 1 1/2 cups beans
  • 2 cups water
  • chipotle chile
  • 5 sprigs cilantro
  • salt and ground black pepper
  • cotija cheese
  • feta

Directions

  1. Saute the onion and garlic in the olive oil until slightly browned.
  2. Add the beans, water, salt and pepper and allow to simmer on low heat for 15 minutes
  3. Remove from heat and allow to cool slightly before placing in the blender. Add the chipotle and cilantro and blend.
  4. Reheat thoroughly, for approximately 5 minutes.
  5. May serve along with a sprinkle of fresh cotija cheese and cilantro.

We loved this soup! I used black beans, plenty of chopped cilantro and heaped on the shredded cotija! Pinto beans would also work with this flavor combination and add a completely different color!
