Description

This cream of seafood soup comes together in less than an hour so will be cozied up with a flavorful bowl in no time. Shrimp, mussles, and octopus add the bold flavors of the ocean. Leek, onion, and bell peppers make for a flavorful base that perfectly accents the seafood. This soup is best served with a sprinkle of oyster crackers or a toasted and butter piece of rustic bread.

Ingredients

1 leeks
1 red bell pepper
1 onions
vegetable oil
300 grams prawns
1 kilogram mussels
2 tentacles
1 tablespoon paprika
1 1/2 liters fish stock
100 milliliters heavy cream
salt

Directions

1Add a tablespoon of oil to a skillet on medium heat. Saute the leek, onion, and bell pepper for 5 minutes.
2Add the prawns, mussels, and octopus. Stir a few times and add the paprika.
3Saute for 2 minutes, and then add the fish stock. Simmer on low heat for 25-30 minutes.
4Add the ingredients to a blender. Puree until smooth.
5Strain the sauce into a bowl through a sieve.
6Add the heavy cream and mix well. Season with salt, if needed.
7Serve warm with oyster crackers.
