  • 25 grams butter
  • 100 grams shiitake mushrooms (washed and sliced)
  • 25 grams plain flour
  • 250 milliliters vegetable stock
  • 250 grams cream
  • 1/2 bunch chives (finely chopped)
  • peppercorns (for garnish)

Directions

  1. Heat the butter in a saucepan and fry the mushrooms for about 5 minutes. Season with salt and pepper, dust with flour then add the stock and cream and bring to the boil.
  2. Simmer for about 10 minutes then add the chives, saving some for garnish and serve. Garnish with leftover chives and ground red peppercorns.
