Ingredients

  • 1 celery root (450 grams)
  • 20 grams butter
  • 1 chopped onion
  • 300 grams chestnuts (jared or vacuum sealed)
  • 1 apple (pink lady)
  • chicken stock
  • 2 tablespoons sour cream
  • 20 grams butter
  • 50 grams chestnuts
  • 1/2 apple (pink lady)
  • parsley
  • hazelnut oil

Directions

  1. Peel the celery root, cut it into large chunks.
  2. In a dutch oven, melt the butter, and saute the onion for 3-4 minutes, add chestnuts, celery root, and the apple, peeled and cut into large cubes.
  3. Add salt and pepper.
  4. Cook over high heat for 4-5 minutes stirring constanly.
  5. Add the broth to cover vegetables.
  6. Cook over low heat for 20-25 minutes until the celery is tender.
  7. Pour vegetables and apple in the blender, add the sour cream and blend until creamy.
  8. To make the garnish, in a frying pan melt the butter, add the remaining chestnuts cut in 4. Saute until tender.
  9. Cut the apple (by keeping the skin) in thick slices and then cut out sticks.
  10. To serve, pour the chestnut soup into 4 bowls, garnish with sauteed chestnuts and raw apple sticks, add a little parsley and sprinkle a few drops of hazelnut oil.
