    This was a flavorful and healthy way to eat some veggies! I made a slight substitution (1 cup heavy cream and 1 cup milk instead of 2 cup light cream), but otherwise everything was as followed. The only tricky part is blending everything together. Delicious! If I were to do it again, I might add some ginger for a little more flavor. I think it would work well in this soup.
