Ingredients

  • 2 tablespoons butter
  • 1 onion (diced)
  • 1 pound asparagus (trimmed and cut into chunks)
  • 2 cups vegetable stock
  • 1 cup milk
  • 2/3 cup crème fraîche
  • 2 teaspoons lemon juice

Directions

  1. Melt the butter in a saucepan over medium heat. Sauté the onion for 3 mins. Add the asparagus and sauté for 3 mins. Add the stock and milk; bring to a boil. Reduce heat to low; simmer for 10 mins, removing a few asparagus tips after 3 mins and setting aside.
  2. Purée the soup in the blender or with an immersion blender. Stir in the crème fraîche and lemon juice. Season with salt and black pepper. Ladle into bowls and garnish with the reserved asparagus tips.

This was our main course for Christmas day. It was silky, bright and rich. You felt like you were being naughtier with the calories than you actually were. My girls have requested it several times since.
