These Cream Muffins will be the softest muffins you have ever had in your entire life. Using vegetable oil as the fat element, these muffins are made with no butter. Incredibly moist, without increased density, these cookies are made with heavy cream for a light texture. These Cream Muffins have a hidden surprise inside, a thin layer of hazelnut cream! Enjoy these creamy, soft muffins as a grab and go breakfast or an afternoon snack.

Ingredients

  • 250 grams flour
  • 150 grams sugar
  • 200 grams heavy cream
  • 3 tablespoons vegetable oil
  • 2 eggs
  • 2 teaspoons baking powder
  • 1 vanilla bean (or 2 tsp. vanilla extract)
  • 12 tablespoons cream (hazelnut)

Directions

  1. Preheat the oven to 180C.
  2. Combine the flour, the sugar, baking powder, and vanilla seeds in one bowl.
  3. Beat the eggs with the heavy cream and the oil in another bowl.
  4. Mix the dry ingredients with the wet ingredients quickly, just enough to combine.
  5. Line a muffin pan with muffin liners and place one tablespoon of batter in each liner, next add a tablespoon of hazelnut cream and last, top with another tablespoon of batter.
  6. Bake the muffins for approximately 15 minutes.
  7. Remove the muffins from the oven and cool on a wire rack.

When I first seen this recipe I was not sure on how it would taste; man was I pleasantly surprised . These muffins were incredibly moist and were not as dense as many other muffins I have made in the past. They were slightly airy and did not fall apart the second you unwrapped them. Giving this muffin recipe 4 stars and plan to make it many more times in the future.
