Bundt cakes are a wonderful attractive option for brunch or as a post-dinner accompaniment to a cup of coffee or tea. This Cream Cheese and Lemon Bundt Cake is made for the summertime. Made with cream cheese and a mixture of cake and wheat flour this bundt is creamy and dense and bursting with fresh citrus flavor. Sprinkle with powdered sugar before serving and serve with freshly whipped cream for a fun afternoon treat or dinner dessert option.

Ingredients

  • 150 grams cake flour
  • 100 grams wheat flour (without yeast)
  • 185 grams softened butter
  • 1 lemon zest
  • 185 grams Philadelphia Cream Cheese
  • 250 grams sugar
  • 3 eggs

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Grease the cake pan, and sprinkle with flour.
  3. 3Sift flours.
  4. 4Set aside.
  5. 5Beat the butter with the lemon zest and the cheese until well mixed. Add the sugar and beat well until the mixture swells.
  6. 6Add eggs, one at a time and, slowly, gradually add the flour.
  7. 7Pour the mixture into baking pan, and smooth the surface with a spatula.
  8. 8Bake for 45 to 50 minutes (depending on your oven), or until a toothpick comes out clean from the middle of the cake.
  9. 9Remove from oven, and let cool for 10 minutes before unmolding.
  10. 10Decorate to taste.
