This light pudding dessert is the perfect finish to any meal. Combining the sweetness of honey with the warmer nuttiness of coconut, this creamy dessert featuring cottage cheese will be sure to satisfy.

Ingredients

  • 5 eggs (separated)
  • salt
  • 170 grams cottage cheese
  • 140 grams sugar
  • 2 tablespoons honey
  • 1 lemon juice (and zest)
  • 100 grams grated coconut
  • powdered sugar (to taste)
  • honey (to taste)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a pie pan, or a small rectangular pan with margarine.
  3. Set aside.
  4. Separate the egg yolks from the egg whites.
  5. Whisk the egg whites to stiff peaks with a pinch of fine salt. Set aside.
  6. Add cottage cheese to egg yolks, and beat well with an electric mixer.
  7. Add sugar, honey, lemon zest and juice, and grated coconut.
  8. Beat well until homogeneous.
  9. Gradually add the egg whites, gently, from bottom to top, without beating.
  10. Place the dough in greased pan, and bake for about 25 minutes.
  11. Remove from oven, and let cool.
  12. Cut into strips or squares.
  13. Serve sprinkled with powdered sugar, and a drizzle of honey.

My cheesecakes are usually topped with berries, and I've never used cottage cheese before, but I'm glad I gave this unique recipe a try. It is very smooth, soft and creamy. Love the sweetness of the honey and the taste of the grated coconut in every bite. Will be making this again when I'm craving cheesecake.

This is so easy and yummy. I was very excited to try this. It is like a custard. You could make it in individual dishes as well. This is great for dessert. I will make this again and again!
