Cream Cheese Pie With Coconut and Honey

Description

This light pudding dessert is the perfect finish to any meal. Combining the sweetness of honey with the warmer nuttiness of coconut, this creamy dessert featuring cottage cheese will be sure to satisfy.

Ingredients

5 eggs (separated)
salt
170 grams cottage cheese
140 grams sugar
2 tablespoons honey
1 lemon juice (and zest)
100 grams grated coconut
powdered sugar (to taste)
honey (to taste)

Directions

1Preheat oven to 180 degrees Celsius.
2Grease a pie pan, or a small rectangular pan with margarine.
3Set aside.
4Separate the egg yolks from the egg whites.
5Whisk the egg whites to stiff peaks with a pinch of fine salt. Set aside.
6Add cottage cheese to egg yolks, and beat well with an electric mixer.
7Add sugar, honey, lemon zest and juice, and grated coconut.
8Beat well until homogeneous.
9Gradually add the egg whites, gently, from bottom to top, without beating.
10Place the dough in greased pan, and bake for about 25 minutes.
11Remove from oven, and let cool.
12Cut into strips or squares.
13Serve sprinkled with powdered sugar, and a drizzle of honey.
