Description

Cajun style cooking brings spicy hot home. Create the ambiance of New Orleans with some cool Jazz music to go with this main dish. Onions, carrots, and tomatoes add vibrant colors. The brandy gives the whole thing a touch of sweetness. Perfect for impressing guests and family members alike. Requires little effort to clean the crawfish and saute the vegetables.

Ingredients

1 1/2 kilograms crawfish
1 kilogram tomatoes (pureed)
1 onions (large)
1 carrots (large)
2 chili peppers (guindilla, may substitute red pepper flakes)
1 cup brandy
2 bay leaves
ground black pepper
parsley
salt

Directions

1Rinse and clean the crayfish. Boil briefly and drain.
2Saute the onion and carrot in a skillet until tender. Add the tomato, crawfish, and brandy.
3Once the alcohol has evaporated slightly, add the bay leaves, chili pepper, black pepper, salt, and parsley.
4Simmer until the tomato is cooked.
