Cranberry and Chocolate Muffins

Some folks believe that chocolate goes with practically anything, and here at least they have a point, since these chocolate muffins are made with berries folded into the batter, and not the usual strawberries or raspberries. Blueberries, blackberries, and even cranberries (either fresh or frozen and thawed) would all work equally well in this recipe. Be sure to use chocolate that is at least 70 percent cocoa for the richest, deepest, most chocolatey flavor.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup milk
  • 1/2 cup natural yogurt
  • 1/2 cup oil
  • 100 grams chocolate
  • cocoa
  • 1 cup frozen blueberries (or fresh)

Directions

  1. Preheat oven to 200 degrees Celsius. Grease a cupcake mold or line with paper liners.
  2. Mix the flour, sugar, a pinch of salt, baking soda, and baking powder together.
  3. Add the eggs, milk or yogurt and oil.
  4. Add the chopped chocolate.
  5. Mix the blackberries with a little flour - so as not to color the dough to much or sink to the bottom of the muffin - and add to the batter.
  6. Pour the batter into cupcake molds and bake for 20 minutes.
