Wanted to try something different for our holiday meal. It turned out delicious and perfectly. The big bonus was how lovely it looked when served. I have made it twice and there have been no complaints ever.

This is so delicious! My first time butterfly cutting pork loin. It's difficult if the pork loins are small or low in weight, mine was 4 lbs. I overstuffed the stuffing mixture and when I tried to pull it together it was the biggest mess. Then I didn't have proper ties to keep pork loin closed. I used metal pokers and then I couldn't properly braise the meat because they were longer than my pan. I suggest getting some meat ties. Not sure where, but do it. I suggest getting a heavier lb. one and putting thin layer of stuffing mixture. My husband doesn't like nuts or cranberries so he wasn't excited about it, but I didn't hear any complaints. Good luck it's worth it.
