  • 1 3/4 cups flour
  • 1 1/2 cups cornmeal (yellow)
  • 3 Tbsp. sugar
  • 2 Tbsp. baking powder
  • 1 tsp. salt
  • 3 eggs (slightly beaten)
  • 1 1/2 cups milk
  • 1/3 cup vegetable oil
  • 1 1/2 cups fresh cranberries

    Directions

    1. Combine all ingredients in large bowl, blend well. Add eggs, milk and oil; stir to make a smooth batter; fold in cranberries. Fill well-greased muffin pan cups 2/3 full. Bake in a hot oven (425 degrees F.) for 15-20 minutes or until well browned; remove from pans. Serve warm or at room temperature.
